I love being in my kitchen. It's my safe place. When I'm there, I can get lost in cooking or baking; or by re-organizing the contents in the cabinets. That actually drives John.e crazy. He can't stand opening the cupboard door to fetch his favourite cereal bowl just to find that I had moved it the day before to a different cupboard or to a different shelf.
I find no pleasure in hearing him mumble or grumble with frustration. But, the feeling of freshness and newness that I get from rearranging things far outweighs his need for normalcy.
WHENEVER YOU CAN BLAME A FAULT ON A PARENT, DO SO!
I get the need to move things about from my mom. I swear, I remember her moving things about at least once per month. You would never walk about the house in the middle of the night with no lights on. You never knew from one day to the next where the couch was going to be. In fact, a wall might have appeared too! I kid you not, Dear Reader!
Many times we would arrive home for lunch to find a sandwich set out on the kitchen counter. Sitting to the table was not an option. That particular day my parents decided that the wall which separated the dining room from the living room was not needed, so the house was literally being torn apart.
Don't you worry though, Dear Reader; that wall went back up again in a few months. But, maybe this time around, the wall had a large window-like hole in it with wooden banisters, where my mom could place decorative items such as vases and picture frames.
With that said, John.e shouldn't complain too much when I move a bowl or move the couch to another part of the room. At least the walls are intact still!
LET'S GET BACK ON TRACK HERE; SHALL WE?
I may have gotten a little off topic here, so I digress. My point is that even though I love cooking and baking, sometimes, I like to take the easy route. This is by far the easiest recipe to prepare. And, the best part is that all you need is chicken and two other ingredients. Even a food blogger needs a day of rest!
I love the combination of the smokiness and sweetness from the barbeque sauce. Especially when it's paired with the tanginess and sweetness of the orange marmalade. You can obviously use whichever brands you prefer, and you can use whichever flavours you prefer as well.
I used my homemade marmalade and my favourite store brand of barbeque sauce . If you prefer to use a lemon marmalade, please do so. And you can use a hot and spicy barbeque sauce or stick with a basic flavour like I did.
MARMALADE AND BARBECUE SAUCE TOGETHER?
Orange Marmalade Barbeque Chicken is the perfect main for a busy weeknight dinner. After all, the only thing you need to do is combine two ingredient and spoon the mixture over your chicken. It really could not get any easier than that!
I think this dish is best served with a very simple side. Even though the flavour of the sauce is not complex, the end result is a very flavourful, tasty dish. It's got every element you'd like in a main. It's sweet and salty, it's saucy and sticky, and it's hearty and wholesome.
My idea of a good side dish would be simple brown rice, or some steamed broccoli. And if it's summertime, consider a fresh and light salad, or even some nicely grilled corn.
Orange Marmalade Barbeque Chicken is extremely suited to potlucks and picnics and can be eaten at room temperature or warm. For a potluck, transfer the cooked chicken to your slow cooker and set the temperature for low or warm.
For a picnic, wait until it cools down and then pack it into a glass container with a tight fitting lid. Keep it cool and out of direct sunlight until ready to eat. I think food always tastes better outside!

- 14 chicken drumsticks, skin on
- 1 cup orange marmalade
- 1 cup barbeque sauce
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon parsley, chopped, for garnish (optional)

Preheat oven to 350 degrees. Lightly spray a baking sheet with non-stick cooking spray

Position the chicken drumsticks on the baking sheet and evenly distribute the salt and pepper over them.

Bake the chicken for 20 minutes.

In the meantime, stir the marmalade and the barbeque sauce together in a bowl and set aside.

Remove the chicken from the oven and spoon the sauce on to the top of each drumstick. Use only half of the sauce.

Return the chicken to the oven and bake for another 15 minutes.

Once again, remove the chicken from the oven, spoon the remaining sauce onto the drumsticks and bake for 20 minutes more.

Once done, garnish and serve.
